Black Beans Cuban Style
1/2 pound dried black beans
1 medium onion, finely chopped
1/2 small green pepper, finely chopped
2 cloves garlic, pressed
a little oregano
1/2 teaspoon ground cumin
1 to 2 bay leaves
1 teaspoonful of Dijon or other strong flavored mustard
1 tablespoon dark, strong flavored vinegar
red wine to taste
1/4 cup red pimento, finely chopped
dash of red pepper
sea salt to taste
1 vegetable bouillon cube

Wash and soak the beans overnight in water to cover. The next day, saute the onion and green pepper until soft. Add black beans to crockpot, along with soaking water.
Add remaining ingredients, stir well, cover, and cook on low about 8 to 10 hours until beans are soft. Serve over rice with chopped onions on top.
Pineapple Stuffed Sweet Potatoes
1 (20 ounce) can cubed pineapple, with juice
2 1/2 cups granola cereal with cinnamon and raisins
4 large sweet potatoes, unpeeled, baked
1/2 cup dry granola cereal for garnish

Pour pineapple with juice and 2 1/2 cups granola cereal into crockpot and cook on LOW for 2 hours.
While mixture is cooking, bake sweet potatoes in oven. When both potatoes and pineapple granola mixture are done, split potatoes in half and stuff with pineapple mixture. Sprinkle 1/2 cup dry granola cereal on the potatoes for garnish.



Broccoli Corn Bread
1 stick of margarine, melted
10 ounces of packaged chopped broccoli, cooked & drained
1 chopped onion
1 box of corn bread mix
4 eggs, well beaten
8 ounces of cottage cheese
1 1/4 teaspoon of salt

Combine all of the ingredients. Mix well. Pour into greased slow cooker.
Cook on LOW for 6 hours, or until a toothpick inserted into the center comes out clean.  Serve like spoon bread or invert the pot and remove the bread, and cut into wedges.



Crockpot Zucchini Souffle
4 cups grated zucchini
1 3/4 cup Bisquick
3/4 cup Parmesan Cheese
1/4 cup oil
4 eggs, beaten
1 large onion, diced
3 garlic cloves, minced
3 Tbsp. parsley
salt to taste

Spray crockpot with nonstick cooking spray. Combine all ingredients in a bowl. Pour into crockpot. Cook on LOW 6 to 8 hours.
